What you will need:

- Spray large pan/skillet with non-stick spray and heat on med/high heat
- Add oats and brown according to how toasted and crunchy you want your final product. I generally do 2-5 mins
- Once oats are toasted, turn heat down to med/low heat and add your *liquids to the pan *(sweeteners of choice). Mix thoroughly and brown mixture until you have reached your desire crunchiness and/or the mixture is fairly dry. I generally do 1-2 mins
- Add spices and continue to brown until the spices are evenly distributed
- Remove mixture from heat and place put in a bowl
- Add to you pan your nuts and dried fruits, but only the ones that you which to have toasted and/or hardened. This will only takes about 30 secs or so pending your pan and the heat level. But watch it, because it can go from brown to burnt REAL FAST
- Once toasted add nuts and fruits to bowl with granola mixture. Then add the nuts and fruits that you set aside
- Mix all ingredients in the bowl well. Then line a cookie sheet with parchment paper and pour granola out onto pan. Spread out evenly.. or create your clusters if you have created a sticky mixture
- Leave granola on the counter to cool (30-60 mins) or pop in the freezer/fridge to cut cooling time in half
- Once the mixture is cooled, it is ready to use right away. Store in an air tight container
