For Gyros
1 cup wheat gluten
½ tbs sea salt
½ tbs pepper
½ tbs liquid smoke
1 tbs garlic powder
1 tbs onion powder
1 tbs mustard
1 tbs ketchup
1 tbs soy sauce or liquid aminos
1 tbs tahini or peanut butter
¾ cup water
Dash of basil
Dash of oregano
Garlic Olive Oil, Extra Virgin Olive Oil or Earth Balance Vegan Butter for cooking
Parchment Paper

Skillet or Large Frying Pan
Bowl
Pita Bread or Naan Bread (Trader Joe’s has some good Garlic Naan Bread). You can warm the bread slightly, before assembly and serving, to enhance the eating experience.
Pre heat oven to 350 degrees
Add wheat gluten and all the dry ingredients in the bowl and mix it well. After it is combined make a well in the center of the mixture to add the water and wet ingredients. Mix well until dry and wet ingredients become dough. It should feel firm not falling apart or super sticky. If it is too wet add a sprinkle of wheat gluten.
Remove dough from bowl and form into a log. Wrap with parchment paper and twist both ends (making it look like a wrapped piece of candy). Over this wrapping wrap again with aluminum foil and bake for 25-30 mins. Then flip and bake another 15-20 mins.
Take the log out and let it sit to cool. You can also put it in the fridge to help it firm and cool quicker. Once it is cooled you should be able to slice it (into gyro like pieces). A serrated knife works best. Heat skillet with oil (Garlic Olive is GREAT, or Earth Balance Butter), toss strips and cook until golden brown.
For Taziki Sauce
1 cup non flavored non dairy yogurt (Siggi, So Delicious or Silk brands are good)
¼ - ½ cup diced peeled cucumber (add to taste)
¼ cup lemon juice (add to taste more or less)
Season to taste with sea salt, pepper and dill weed
We tend to go heavier on the dill and lemon. So start lightly and then add more if it’s not where you want it!
Mix all ingredients well in a bowl. Please note that as the Taziki sits the cucumbers will release water. So if you will need a lot of sauce, it is best to make it in small batches.
Gryos is great served with a side of roasted potatoes, roasted veggies, salad, chips or raw veggies!! Create you own feast.
